Zucchini Bread Muffins

Ingredients
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 teaspoons cinnamon
¼ teaspoon nutmeg
1 egg, room temperature
½ cup vegetable oil
2 teaspoons vanilla extract
½ cup dark brown sugar
¼ cup granulated sugar
1 cup shredded zucchini
½ cup chopped walnuts
Directions
Preheat oven to 350 degrees F.
In a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
In a medium mixing bowl, combine egg, vegetable oil, both sugars, vanilla extract, zucchini, and walnuts. Mix until well blended.
Pour zucchini mixture into flour mixture. Mix until just incorporated.
Pour batter into a greased muffin pan.
Bake for 18 - 20 minutes or until toothpick comes out clean.
Cool muffins on baking rack.
