Pumpkin Bites

Pumpkin Bites

Prep Time: 15 minutes | Cook Time: 12 minutes | Servings: 30 cakelets

Ingredients

  • 1 cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 teaspoon cinnamon

  • ½ teaspoon allspice

  • ½ teaspoon ginger

  • ¼ teaspoon nutmeg

  • ¼ teaspoon clove

  • 2 eggs

  • ½ cup vegetable oil

  • ½ cup dark brown sugar

  • 1 teaspoon vanilla extract

  • 1 cup pumpkin puree

Directions

  1. Preheat oven to 350 degrees F.

  2. In a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, allspice, ginger, nutmeg, and clove. Set aside.

  3. In a medium mixing bowl, combine eggs, oil, sugar, vanilla extract, and pumpkin puree.

  4. Mix wet ingredients into flour mixture. Stir until fully combined.

  5. Pour batter into a greased cakelet pan. Fill ⅔ full.

  6. Bake for 10 - 12 minutes or until toothpick comes out clean.

  7. Cool cakelets on baking rack.

    Note: If you do not have a cakelet pan, you can use a mini-cupcake pan. Otherwise, this recipe will make 12 standard muffins, with a bake time of 20 minutes.
