Pumpkin Bites

Ingredients
1 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon allspice
½ teaspoon ginger
¼ teaspoon nutmeg
¼ teaspoon clove
2 eggs
½ cup vegetable oil
½ cup dark brown sugar
1 teaspoon vanilla extract
1 cup pumpkin puree
Directions
Preheat oven to 350 degrees F.
In a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, allspice, ginger, nutmeg, and clove. Set aside.
In a medium mixing bowl, combine eggs, oil, sugar, vanilla extract, and pumpkin puree.
Mix wet ingredients into flour mixture. Stir until fully combined.
Pour batter into a greased cakelet pan. Fill ⅔ full.
Bake for 10 - 12 minutes or until toothpick comes out clean.
Cool cakelets on baking rack.
Note: If you do not have a cakelet pan, you can use a mini-cupcake pan. Otherwise, this recipe will make 12 standard muffins, with a bake time of 20 minutes.
