Key Lime Pie Bars

Ingredients
Graham Cracker Crust
12 full sheet graham crackers, crushed
½ cup butter, melted
¼ cup granulated sugar
¼ teaspoon cinnamon
Key Lime Layer
3 large egg yolks
1 (14 oz) can sweetened condensed milk
½ cups freshly squeezed lime juice
1 ½ tablespoon freshly grated lime zest
Directions
Preheat oven to 350 degrees F.
Grease a 9x6 inch baking dish.
In a large mixing bowl, combine crushed graham crackers, sugar, and cinnamon. Mix in melted butter until all crumbs are moistened.
Press graham cracker crust to the bottom of the prepared baking dish.
Bake crust for 10 minutes.
In a mixing bowl, beat egg yolks for 3 minutes with an electric hand mixer. Add condensed milk and mix for 2 minutes, until smooth. Add lime juice and lime zest, whisk for 2 minutes.
Pour lime mixture over baked graham cracker crust.
Bake for 15 minutes.
Once bars have cooled completely, refrigerate for at least 3 hours.
