Blueberry Muffin Bread

Blueberry Muffin Bread

Prep Time: 15 minutes | Cook Time: 60 minutes | Servings: 1 loaf

Ingredients

  • ⅔  cups sugar

  • 1 egg

  • ½ cup vegetable oil

  • ⅓ cup milk

  • 1 teaspoon vanilla extract

  • 1 ¼ cups all-purpose flour

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • ½ cup sour cream

  • 1 cup blueberries

Directions

  1. Preheat oven to 350 degrees F.

  2. In a large mixing bowl, combine sugar, egg, oil, milk, and vanilla extract until well blended.

  3. In a medium mixing bowl, combine flour, baking powder, and salt.

  4. Stir the dry ingredients into the wet mixture until just combined. 

  5. Stir in the sour cream until well blended. 

  6. Fold in blueberries.

  7. Pour batter into a prepared loaf pan.

  8. Bake for 60 minutes or until toothpick comes out clean. About halfway through baking, cover the top of the bread with foil to prevent over cooking. 

  9. Cool bread for 10 minutes before removing from pan.

Notes

  • This recipe can be used to make 12 blueberry muffins instead of a loaf. Adjust oven temperature to 375 degrees F and bake for 20 - 25 minutes.

  • Plain yogurt can be used in place of sour cream.
