Banana Bread

Banana Bread

Prep Time: 15 minutes | Cook Time: 60 minutes | Servings: 1 loaf

Ingredients

  • 3 very ripe bananas

  • ½ cup sour cream

  • 1 tablespoon vanilla extract

  • 1 ½ cups all-purpose flour

  • ½ cup chopped walnuts

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • ⅓ cup granulated sugar

  • ½ cup brown sugar

  • ½ cup butter

  • 2 eggs

Directions

  1. Preheat oven to 350 degrees F.

  2. In a medium mixing bowl, combine flour, walnuts, baking soda, and salt. Set aside.

  3. In a separate medium mixing bowl, mash the bananas. Stir in sour cream and vanilla extract. Set aside.

  4. In a large mixing bowl, beat butter and sugar at medium speed for 3 minutes, until creamy.

  5. Add eggs one at a time, until well blended.

  6. Stir the dry ingredients into the large bowl until nearly combined. 

  7. Stir in the banana mixture until combined. 

  8. Pour batter into a prepared 8x4 inch loaf pan.

  9. Bake for 50 to 60 minutes or until a toothpick comes out clean. About 40 minutes into baking, cover the top of the bread with foil to prevent over cooking. 

  10. Allow bread to cool for 20 minutes before removing from pan.

Notes

  • This recipe can be used to make 12 banana muffins instead of a loaf. Bake at 350 degrees F approximately 20 minutes.

  • Plain yogurt can be used in place of sour cream.
