Bagels

Ingredients
2 teaspoons active dry yeast
1 ½ tablespoons granulated sugar
1 ¼ cup warm water
3 ½ cups all purpose flour
1 ½ teaspoon salt
Directions
In a large mixing bowl combine ½ cup warm water, sugar, and yeast. Quickly stir. Allow to sit for 10 minutes until yeast mixture becomes foamy.
Add flour, salt, and remaining warm water to yeast mixture. Stir until combined.
Remove dough from mixing bowl and knead on a floured surface for 8 minutes.
Shape dough into a smooth ball.
Place dough in a greased mixing bowl. Cover with plastic wrap and place bowl in a warm location for 60 minutes, or until the dough has doubled in size.
Preheat oven to 425 degrees F.
Punch down dough and let it rise for 10 minutes.
Divide dough into 8 equal pieces and on a lightly floured surface, roll dough into tight balls.
With a floured thumb, jab a hole into the middle of each ball and stretch the dough until the hole is about 1 ½ inches in diameter.
Boil bagels for 60 to 90 seconds on each side.
Place boiled bagels on a greased baking sheet.
Bake bagels for 18 - 22 minutes.
