Sweet Potato Pie
I will always choose sweet potato pie over pumpkin pie! This sweet potato pie is a southern classic and perfect for fall baking.
Prep Time: 55 minutes | Cook Time: 1 hour | Servings: 6-8 slices
Ingredients
1 pound sweet potatoes (2 cups mashed)
½ cup butter, softened
1 cup granulated sugar
½ cup milk
2 eggs
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
¼ teaspoon ground clove
1 teaspoon vanilla extract
1 (9 inch) unbaked pie crust
Directions
Preheat oven to 350 degrees F.
Boil sweet potatoes whole for about 40 minutes, or until done.
Run cooked sweet potatoes under cold water and remove skin.
In a large mixing bowl, mash sweet potatoes until smooth.
Stir in butter, sugar, milk, eggs, nutmeg, cinnamon, clove, and vanilla extract. Beat on medium speed until mixture is smooth.
Pour filling into prepared pie dish.
Bake for 55 to 60 minutes.
