Sweet Potato Pie
I will always choose sweet potato pie over pumpkin pie! This sweet potato pie is a southern classic and perfect for fall baking.
Prep Time: 55 minutes | Cook Time: 1 hour | Servings: 6-8 slices
Ingredients
- 1 pound sweet potatoes (2 cups mashed) 
- ½ cup butter, softened 
- 1 cup granulated sugar 
- ½ cup milk 
- 2 eggs 
- ½ teaspoon ground nutmeg 
- ½ teaspoon ground cinnamon 
- ¼ teaspoon ground clove 
- 1 teaspoon vanilla extract 
- 1 (9 inch) unbaked pie crust 
Directions
- Preheat oven to 350 degrees F. 
- Boil sweet potatoes whole for about 40 minutes, or until done. 
- Run cooked sweet potatoes under cold water and remove skin. 
- In a large mixing bowl, mash sweet potatoes until smooth. 
- Stir in butter, sugar, milk, eggs, nutmeg, cinnamon, clove, and vanilla extract. Beat on medium speed until mixture is smooth. 
- Pour filling into prepared pie dish. 
- Bake for 55 to 60 minutes.
