Navy Bean Pie

Navy Bean Pie

If you have never tried navy bean pie you are truly missing out. Bean pie is best described as a mix between custard and pumpkin pie. This is my sister’s favorite dessert, so I make it every year for her birthday. 

Prep Time: 15 minutes | Cook Time: 1 hour | Servings: 6-8 slices

Ingredients

  • 1 cup evaporated milk

  • 1 cup canned unsalted navy beans, rinsed, drained, and mashed

  • 1 cup granulated sugar

  • 4 tablespoons butter

  • 1 ½ tablespoon flour

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ¼ teaspoon ground clove

  • 3 eggs

  • 1 tablespoon vanilla extract

  • 1 (9 inch) unbaked pie crust

Directions

  1. Preheat oven to 350 degrees F.

  2. In a large mixing bowl, mix evaporated milk, mashed beans, sugar, flour, vanilla, cinnamon, nutmeg, clove, and eggs until smooth. 

  3. Pour filling into prepared pie dish. 

  4. Bake for 60 minutes, or until golden brown on the top and filling has set.

  5. Let pie cool completely prior to serving.
