Oatmeal Raisin Cookies

Ingredients
¾ cup butter, softened
¾ cup dark brown sugar
½ cups granulated sugar
1 egg
2 teaspoon vanilla extract
1 ⅓ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
¾ teaspoon cinnamon
¼ teaspoon nutmeg
1 ½ cups rolled oats
¾ cup raisins
Directions
Preheat oven to 350 degrees F.
Line a baking sheet with parchment paper.
In a medium mixing bowl whisk flour, baking soda, salt, cinnamon and nutmeg. Set aside.
In a large mixing bowl cream butter for about 1 minute.
Add dark brown sugar and granulated sugar to butter. Beat for about three minutes until light and fluffy.
Add egg and vanilla extract, beat for 1 minute.
At a low speed, add flour mixture until just incorporated.
Stir in oats until just combined.
Fold in raisins with spatula.
Form 1 ½ tablespoon balls.
Place cookie dough balls onto baking sheet about 1.5 inches apart.
Bake for 12 minutes, rotating the pan halfway through baking.
Transfer pan to a wire rack and let cool for 10 minutes.
Remove cookies from baking pan and let them continue to cool on wire rack.
