Oatmeal Raisin Cookies

Oatmeal Raisin Cookies

Prep Time: 15 minutes | Cook Time: 12 minutes | Servings: 20 cookies

Ingredients

  • ¾ cup butter, softened 

  • ¾ cup dark brown sugar

  • ½ cups granulated sugar

  • 1 egg

  • 2 teaspoon vanilla extract

  • 1 ⅓ cups all-purpose flour

  • ¾ teaspoon baking soda

  • ½ teaspoon salt

  • ¾ teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • 1 ½ cups rolled oats

  • ¾ cup raisins

Directions

  1. Preheat oven to 350 degrees F.

  2. Line a baking sheet with parchment paper.

  3. In a medium mixing bowl whisk flour, baking soda, salt, cinnamon and nutmeg. Set aside.

  4. In a large mixing bowl cream butter for about 1 minute.

  5. Add dark brown sugar and granulated sugar to butter. Beat for about three minutes until light and fluffy.

  6. Add egg and vanilla extract, beat for 1 minute.

  7. At a low speed, add flour mixture until just incorporated.

  8. Stir in oats until just combined.

  9. Fold in raisins with spatula.

  10. Form 1 ½ tablespoon balls.

  11. Place cookie dough balls onto baking sheet about 1.5 inches apart.

  12. Bake for 12 minutes, rotating the pan halfway through baking.

  13. Transfer pan to a wire rack and let cool for 10 minutes.

  14. Remove cookies from baking pan and let them continue to cool on wire rack.
