Coffee Cake

Ingredients
Streusel
½ cup all-purpose flour
⅓ cup dark brown sugar
1 ½ teaspoons cinnamon
3 tablespoons butter, chilled and cubed
Cake
1 ⅓ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
½ cup butter, softened
2 large eggs, room temperature
¾ cup granulated sugar
2 teaspoons vanilla extract
½ cup sour cream, full fat, room temperature
Directions
Streusel
Preheat 350 degrees F.
Grease a 9x6 inch baking dish.
In a medium bowl, combine flour, dark brown sugar, and cinnamon.
Mix in butter with a fork until mixture resembles pea-sized crumbs.
Refrigerate streusel until ready to use.
Cake
In a medium mixing bowl, combine flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl, cream butter and sugar for 4 minutes.
Add eggs, one at a time.
Add vanilla extract, mixing until fully combined.
Mix in sour cream.
Add flour mixture, mixing at low speed until just incorporated.
Evenly spread half of batter into the prepared baking dish using a silicon spatula.
Sprinkle half of the streusel over the batter.
Spread the remaining batter over the streusel layer. Then sprinkle the remaining streusel on top.
Bake for 35 - 40 minutes, or until toothpick comes out clean
Allow to cool for about 15 minutes before serving.
Note: An 8x8 baking dish can be used instead of a 9x6.
