Berry Cobbler

Berry Cobbler

Prep Time:  20 minutes | Cook Time: 45 minutes | Servings: 1 (9x13) tray

Ingredients

Berry Filling

  • 3 cups fresh blueberries

  • 2 cups fresh strawberries

  • 1 ½ cup fresh blackberries

  • 1 cup fresh raspberries

  • ¼ cup granulated sugar

  • 2 tablespoons cornstarch

  • 1 teaspoon lemon juice

  • 1 teaspoon vanilla extract

Biscuit Topping

  • 2 cups all-purpose flour

  • ⅓ cup granulated sugar

  • ½ teaspoon salt

  • 1 ½ teaspoon baking powder

  • ¼ teaspoon baking soda

  • ½ cup cold salted butter, cubed

  • ½ cup cold buttermilk

  • 1 egg, beaten for egg wash

Directions

Berry Filling

  1. Preheat 350 degrees F.

  2. In a large bowl, mix berries together with sugar, vanilla extract, lemon juice, and cornstarch. Toss until all berries are well coated.

  3. Spread berry filling into a greased 9x13 inch pan.

Biscuit Topping & Assembly

  1. In a large mixing bowl, combine flour, sugar, baking soda, baking powder, and salt.

  2. Add diced butter to the flour mixture until it looks like coarse crumbs.

  3. Add cold buttermilk to the flour mixture. Stir until dough is combined.

  4. Take a portion of dough and gently flatten.

  5. Place dough over berry filling — some berry filling might still be showing.

  6. Brush the top of the biscuit dough with the egg wash. 

  7. Bake for 45 minutes, or until the biscuit top is golden brown.

  8. Allow to cool for about 5 minutes before serving.

Serve berry cobbler while warm with a scoop of vanilla bean ice cream or whipped cream.
