Mini Berry Galettes
Prep Time: 2 hours, 30 minutes | Cook Time: 20 minutes | Servings: 4 mini galettes
Ingredients
Pastry Dough
1 ½ cup all-purpose flour
3 tablespoons granulated sugar
¼ teaspoon salt
½ cup cold salted butter, cubed
¼ cup ice water
1 egg, beaten for egg wash
Berry Filling
2 cups of fresh berries (strawberries should be quartered)
2 tablespoons granulated sugar
1 teaspoon vanilla extract
2 tablespoons melted butter
Directions
Pastry Dough
In a large bowl, whisk flour, sugar, and salt.
Add in butter until the mixture resembles coarse crumbs.
Stir in water, until mixture forms a ball.
Press dough into a flat disk and wrap in plastic.
Refrigerate dough for at least 2 hours; preferably overnight.
Berry Filling & Assembly
In a medium bowl, mix berries together with sugar, vanilla, and melted butter. Toss until all fruit is well coated.
Set aside and allow mixture to sit for about 20 minutes.
Preheat oven to 425 degrees F.
On a lightly floured surface, cut pastry dough into 4 equal parts. Roll the pastry dough into a 4 inch circle.
Arrange berries onto dough, leaving a 1 inch border around the edges.
Fold the edges of the dough over the fruit.
Pour about half of the juice from the bowl over the peaches.
Brush the dough with the egg wash.
Bake for 20 minutes, or until the crust is golden brown.
Allow to cool for about 10 minutes before serving.
Serve galettes while warm with a dollop of crème fraîche.
