Mini Berry Galettes
Prep Time: 2 hours, 30 minutes | Cook Time: 20 minutes | Servings: 4 mini galettes
Ingredients
Pastry Dough
- 1 ½ cup all-purpose flour 
- 3 tablespoons granulated sugar 
- ¼ teaspoon salt 
- ½ cup cold salted butter, cubed 
- ¼ cup ice water 
- 1 egg, beaten for egg wash 
Berry Filling
- 2 cups of fresh berries (strawberries should be quartered) 
- 2 tablespoons granulated sugar 
- 1 teaspoon vanilla extract 
- 2 tablespoons melted butter 
Directions
Pastry Dough
- In a large bowl, whisk flour, sugar, and salt. 
- Add in butter until the mixture resembles coarse crumbs. 
- Stir in water, until mixture forms a ball. 
- Press dough into a flat disk and wrap in plastic. 
- Refrigerate dough for at least 2 hours; preferably overnight. 
Berry Filling & Assembly
- In a medium bowl, mix berries together with sugar, vanilla, and melted butter. Toss until all fruit is well coated. 
- Set aside and allow mixture to sit for about 20 minutes. 
- Preheat oven to 425 degrees F. 
- On a lightly floured surface, cut pastry dough into 4 equal parts. Roll the pastry dough into a 4 inch circle. 
- Arrange berries onto dough, leaving a 1 inch border around the edges. 
- Fold the edges of the dough over the fruit. 
- Pour about half of the juice from the bowl over the peaches. 
- Brush the dough with the egg wash. 
- Bake for 20 minutes, or until the crust is golden brown. 
- Allow to cool for about 10 minutes before serving. 
Serve galettes while warm with a dollop of crème fraîche.
