Madeleines

Ingredients
½ cup butter
2 eggs, room temperature
½ cup granulated sugar
1 teaspoon vanilla extract
1 cups all-purpose flour
½ teaspoon baking powder
⅛ teaspoon salt
Directions
Melt butter and set aside.
In the bowl of a stand mixer, using the whisk attachment, beat eggs and sugar at high speed for 15 - 20 minutes.
Fold in vanilla extract.
In a medium mixing bowl whisk flour, baking powder, and salt.
Using a spatula, gently fold flour mixture into egg mixture. Add flour mixture in small portions.
Pour melted butter into large mixing bowl. Slowly stir batter into melted butter.
Cover batter and refrigerate for 30 minutes.
Preheat oven to 350 degrees F. Grease madeleine pan.
Spoon 1½ tablespoon of batter into the center of each shell. You do not need to spread the batter.
Bake for 12 minutes.
Remove madeleines from baking pan and let slightly cool on wire rack.
