Cornbread
Prep Time: 10 minutes | Cook Time: 35 minutes | Servings: 1 (8x8) pan
Ingredients
½ cup butter, melted
½ cup granulated sugar
¼ cup honey
2 eggs, room temperature
1 cup milk, room temperature
1 cup all purpose flour
1 cup cornmeal
½ teaspoon salt
½ teaspoon baking soda
Directions
Preheat oven to 375 degrees F.
In a large mixing bowl combine melted butter, sugar, and honey.
Add eggs one at a time, beating until mixture is smooth. Add milk and mix to combine.
In a medium mixing bowl, combine flour, cornmeal, baking soda, and salt.
Gradually add dry ingredients into wet ingredients and stir until just incorporated.
Pour batter into a greased 8x8 baking dish.
Bake for 30 - 35 minutes or until toothpick comes out clean. About 20 minutes into baking place a piece of foil over the top of the cornbread to prevent over-browning.
After removing cornbread from oven, brush the top with butter.
Allow cornbread to cool for 5 - 10 minutes before serving.
