Peach Galette

Ingredients
Pastry Dough
1 ½ cup all-purpose flour
3 tablespoons granulated sugar
¼ teaspoon salt
½ cup cold salted butter, cubed
¼ cup ice water
1 egg, beaten for egg wash
Peach Filling
3 peaches (peeled, pitted, and sliced)
2 tablespoons granulated sugar
1 teaspoon vanilla extract
Directions
Pastry Dough
In a large bowl, whisk flour, sugar, and salt.
Add in butter until the mixture resembles coarse crumbs.
Stir in water, until mixture forms a ball.
Press dough into a flat disk and wrap in plastic.
Refrigerate dough for at least 2 hours.
Peach Filling & Assembly
In a medium bowl, mix peaches together with sugar and vanilla. Toss until all fruit is well coated.
Set aside and allow mixture to sit for about 20 minutes.
Preheat oven to 425 degrees F.
On a lightly floured surface, roll the pastry dough into a 12 inch circle.
Arrange peaches onto dough, leaving a 2 inch border around the edges.
Fold the edges of the dough over the fruit.
Pour about half of the juice from the bowl over the peaches.
Brush the dough with the egg wash.
Bake for 25 - 30 minutes, until the crust is golden brown.
Allow to cool for about 10 minutes before serving.
