Lemon Bars

Ingredients
Shortbread Crust
1 cup all-purpose flour
½ cup butter, softened
¼ cup powdered sugar
¼ teaspoon vanilla extract
¼ teaspoon salt
Lemon Layer
2 large eggs
1 large egg yolk
1 cup granulated sugar
2 tablespoons all-purpose flour
¼ cup freshly squeezed lemon juice
1 ½ tablespoon freshly grated lemon zest
Directions
Preheat oven to 350 degrees F.
Grease a 9x6 inch baking dish.
In a large mixing bowl, mix 1 cup flour and butter until completely combined. Mix in powdered sugar, vanilla extract, and salt. Mixture will resemble cookie dough.
Press shortbread crust to the bottom of the prepared baking dish. Using a fork, poke holes all over the crust.
Bake crust for 22 minutes.
In a mixing bowl, beat eggs and egg yolk. Whisk in granulated sugar and 2 tablespoons flour until smooth. Add lemon juice and lemon zest, whisk for 2 minutes.
Pour lemon custard over baked shortbread crust.
Bake for 25 minutes.
Once bars have cooled completely, cut into 8 squares.
Dust with powdered sugar.
