7-Up Pound Cake

7-Up Pound Cake

This is hands down my favorite cake! It’s a must have at every family gathering. The key to this cake is creaming the butter and sugar for the full 20 minutes.

Prep Time: 30 minutes | Cook Time: 1 hour, 15 minutes | Servings: 16 slices

Ingredients

  • 1 ½  cup butter, softened

  • 3 cups granulated sugar

  • 5 eggs

  • 3 cups all-purpose flour

  • 2 teaspoons lemon extract

  • ¾ cups 7-Up

Directions

  1. Preheat oven to 325 degrees F.

  2. Grease a large Bundt pan.

  3. In a large mixing bowl cream butter and sugar for 20 minutes.

  4. Add eggs, one at a time.

  5. Add flour and lemon extract, mix until just incorporated.

  6. Fold in 7-Up.

  7. Pour batter into the Bundt pan.

  8. Bake for 60 - 75 minutes.

  9. Cool on rack for 20 minutes before removing cake from Bundt pan.
